Es conocida la etiopatogenia multidimensional bio-psico-social de los trastornos de la conducta alimentaria (TCA), en la que se interrelacionan variados factores, incluyendo genes, personalidad, eventos vitales y el contexto sociocultural. Entre las diversas aproximaciones que han contribuido a la comprensión de estas patologías, la teoría evolucionista aporta una síntesis de explicaciones fisiológicas, psicológicas y conductuales que han permitido enriquecer su abordaje fenomenológico-clínico y terapéutico2, distinguiendo entre la causalidad próxima –suma de todos los procesos biológicos (bioquímicos, fisiológicos, etc.) y psicológicos que directamente producen el fenómeno–; y remota –el alcance de la participación de un rasgo o sistema de la aptitud reproductiva de un organismo en su medio ambiente natural (ancestral)3.
El objetivo de este trabajo es describir los postulados evolucionaríos que se han aplicado a los TCA, desde la precursora teoría del apego planteada por Bowlby, reforzada por las experiencias de Harlow y Sptiz, hasta las clásicas hipótesis darwinianas basadas en el fenómeno de la selección natural: de la huída de la hambruna, relacionada principalmente con aspectos fi siopatológicos; de la supresión reproductiva referida a la dinámica familiar y de la competencia intrasexual concerniente a la perspectiva psicosocial de estas patologías. Con esta finalidad, se efectuó una búsqueda de evidencia sobre el tema en publicaciones, tanto en idioma inglés como español, de artículos originales, de revisión y de presentación de casuística, entre 1859 y 2010, en textos especializados y en las bases de datos Medline/PubMed, utilizando palabras claves como eating disorders, anorexia nervosa, bulimia nervosa, evolutionary, darwinian, attachment.
La teoría del apego
Uno de los pioneros contemporáneos en aplicar conceptos evolucionistas a la psicología y psicopatología fue John Bowlby (1907-1990), psiquiatra y psicoanalista inglés, cuyo legado conocido como la teoría del apego se centra en la historia actual de la relación entre el niño y su madre focalizándose en sus dificultades y su transmisión a través de las generaciones4.
El apego, vínculo emocional que establece el niño con sus padres, le proporciona la seguridad indispensable para un buen desarrollo de su personalidad. Implica una reacción de adaptación básica evolucionaria para la supervivencia de la especie en la antigua lucha contra los depredadores y surge como una respuesta de temor por parte de la cría por la eventual inaccesibilidad de la madre. Este vínculo se transforma en una necesidad recíproca de relaciones tempranas entre cuidadora/cría que se observa principalmente entre los 9 meses y 3 años de vida, permitiendo la exploración del mundo físico y social de su entorno. Los modelos de apego que aparecen en la infancia, constituyen importantes guías para establecer relaciones significativas en el futuro. Los lazos afectivos en ellos suelen ser positivos, si ofrecen seguridad, afecto y confianza, o negativos, si brindan inseguridad, abandono, miedo5,6.

The multidimensional etiopathogenesis of eating disorders (ED), in which various biological, psychological and behavioral factors are interrelated, including genes, personality, life events and socio-cultural context, is well known. Among the various approaches that have contributed to understanding these diseases, the evolutionary theory provides a synthesis of physiological, psychological, and behavioral explanations that have allowed for the enrichment of phenomenological approaches: clinical and therapeutic, distinguishing between proximate causation; the sum of all biological (biochemical, physiological, etc.) and psychological processes which directly cause the phenomenon; and remotely, the extent of the involvement of a trait or system related to the reproductive abilities of an organism in its natural environment (ancestral)3.
The objective of this work is to describe the evolutionary principles that have been applied to eating disorders, from the pioneer attachment theory proposed by Bowlby, reinforced by the experiences of Harlow and Sptiz, to classic Darwinian hypothesis based on the phenomenon of natural selection: famine flight, primarily related to pathophysiology; reproductive suppression, related to family dynamics and intrasexual competition, concerning the psychosocial perspective of these disorders. To this end, the researchers carried out a search for evidence on this subject in publications both in English and Spanish, original articles, reviews and presentations between 1859 and 2010, in specialized texts and the Medline/ PubMed databases, using keywords like eating disorders, anorexia nervosa, bulimia nervosa, evolutionary, darwinian, attachment.
The Attachment Theory
One of the modern pioneers in the application of evolutionary concepts to psychology and psychopathology was John Bowlby (1907-1990), an English psychiatrist and psychoanalyst. His legacy, known as the attachment theory, is based on the actual history of the relationship between a child and its mother, focusing on their difficulties and the transmission of them from one generation to the next4.
Attachment, an emotional bond that the child establishes with his or her parents, provides necessary security for the proper development of the child's personality. This involves a basic evolutionary adaptation for the survival of a species in the ancient struggle against predators and emerges as the child's response to the fear of the potential inaccessibility of the mother. This bond transforms into a reciprocal need of early relationships between the caregiver and child that primarily occurs between 9 months and 3 years of age and which allows for the exploration of the physical and social environment. Attachment patterns that appear in childhood constitute important guides for the establishment of meaningful relationships in the future. The bonds made between them are often positive, if they offer security, affection and trust, or negative, if they offer insecurity, abandonment, and fear5,6.

A Fernando lo tire al lago de la Casa de Campo hace dos meses. En una urna herméticamente cerrada, como me había pedido. Lo entregué cadáver a la funeraria y me lo devolvieron reducido a limpias cenizas en una caja de bronce con relieves griegos bordeando la tapa. Fernando mismo la había elegido.
Cuando supo que iba a morir, se acercó a mí y me susurró unas palabras al oído. Luego me cogió la mano y, junto, fuimos en busca de su deseo. Era la primera vez que salíamos en mucho tiempo. Le gustó aquella urna porque era grande y, sobre todo, porque la tapa era firme y, según el vendedor, infranqueable. La dejó allí, tras pagarla, con el encargo de que grabaron en una placa negra su nombre y las fechas de nacimiento y muerte tan pronto como yo les llamara. Así ocurrió.
Mi marido murió hace dos mese tras una vida dedicada a buscar lo que no sabe, lo que no huele, lo que no mancha…Era un escrupuloso tiránico que analizaba cada hoja de lechuga antes de comerla, se lavaba los dientes cada vez que se llevaba algo a la boca, se enjabonaba las manos sin descanso y no se desplazaba sin un completo neceser donde nunca faltaban los bastoncillos, el algodón, el alcohol y la lejía. My husband died two months ago after a life dedicated to finding that which he couldn’t define, something that didn’t smell, something that didn’t get dirty…He was a tyrant who meticulously analyzed each leaf of lettuce before eating it, who brushed his teeth whenever he put something in his mouth, who scrupulously lathered his hands with soap and who wouldn’t go out without a bag for toiletries, where his swabs, cotton, alcohol and bleach could always be found. His inspections were always a success.
“You see? I told you!” he would declare, while proudly pointing out a greenfly in the salad.
When I met him, he already had some irritating mannerisms. I remember the first time he kissed me. We went to the movies to see The Way We Were. Robert Redford was hugging Barbra Streisand when Fernando put his arm around me. When I turned to look at him, we kissed. It was a long kiss, with anxious lips and disoriented tongues.
When it was time to go our separate ways, he gave me a mint and put another in his mouth.
“Suck on it. It’s to cleanse our mouths,” he quietly told me while smiling. Then he took a small, perfumed towel out of his bag, like the ones they give you on airplanes after you finish eating, and he frantically rubbed it on his lips. In all honesty, I found it funny.

Factores de riesgo del cáncer de mama
Se conocen bien varios factores de riesgo del cáncer de mama. Sin embargo en la mayoría de las mujeres afectadas no es posible identificar factores de riesgo específicos (IARC, 2008; Lacey et al,2009).
Los antecedentes familiares de cáncer de mama multiplican el riesgo por dos o tres. Algunas mutaciones, sobre todo en los genes BRCA1, BRCA2 y p53, se asocian a un riesgo muy elevado de ese tipo de cáncer. Sin embargo, esas mutaciones son raras y explican solo una pequeña parte de la carga total de cáncer mamario.
Los factores reproductivos asociados a una exposición prolongada a estrógenos endógenos, como una menarquia precoz, una menopausia tardía y una edad madura cuando el primer parto figuran entre los factores de riesgo más importantes del cáncer de mama. Las hormonas exógenas también conllevan un mayor riesgo de cáncer de mama, por lo que las usuarias de anticonceptivos orales y de tratamientos de sustitución hormonal tienen más riesgo que las mujeres que no usan esos productos.La lactancia materna tiene un efecto protector (IARC, 2008, Lacey et al., 2009).
Danaei y colaboradores (Danaei et al., 2005) han calculado la contribución de diversos factores de riesgo modificables, exceptuando los factores reproductivos, a la carga global de cáncer de mama. Los autores concluyen que el 21% de todas las muertes por cáncer de mama registradas en el mundo son atribuibles al consumo de alcohol, el sobrepeso y la obesidad, y la falta de actividad física.
Esa proporción fue mayor en los países de ingresos altos (27%), y el factor más importante fue el sobrepeso y la obesidad. En los países de ingresos bajos y medios, la proporción de cánceres de mama atribuibles a esos factores de riesgo fue del 18%, y la falta de actividad física fue el factor determinante más importante (10%).
La diferente incidencia del cáncer de mama en los países desarrollados y los países en desarrollo puede explicarse en parte por los efectos de la alimentación, unidos a la mayor edad del primer embarazo, el menor número de partos y el acortamiento de la lactancia (Peto, 2001). La creciente adopción de modos de vida occidentales en los países de ingresos bajos y medios es un determinante importante del incremento de la incidencia de cáncer de mama en esos países.

Risk Factors for Breast Cancer
The risk factors for breast cancer are well known. Nevertheless, for the majority of women affected by breast cancer, it is not possible to identify specific risk factors (IARC, 2008; Lacey et al., 2009).
People with a family history of breast cancer are at 2-3 times the risk. Some mutations, particularly in the BRCA1, BRCA2 and p53 genes, are associated with a higher risk for this type of cancer. However, these gene mutations are rare and account for only a small percentage of the total cases of breast cancer.
Reproductive factors associated with a prolonged exposure to endogenous estrogens, like early menarche, late menopause and late age at first childbirth, are the most important risk factors for breast cancer. Exogenous hormones also carry a higher risk for breast cancer, creating a higher risk for women who use oral contraceptives and undergo hormone replacement therapy than those who don’t. Breastfeeding has a protective effect (IARC, 2008, Lacey et al., 2009).
The contribution of diverse modifiable risk factors, excluding reproductive factors, for breast cancer worldwide was determined by Danaei and other collaborators (Danaei et al., 2005). The researchers conclude that 21% of all recorded deaths caused by breast cancer globally are attributed to alcohol consumption, being overweight or obese, and lack of physical activity. This percentage was higher in high-income countries (27%), with being overweight and obese as the most important factor. El cava se obtiene de una mezcla de variedades de uva, la cual se conoce con el nombre de
vino base.
A partir de este vino base viene la propiamente dicha elaboración del cava, efectuando una
segunda fermentación de este mosto.
Hay diversas variedades de uva empleada para la elaboración del cava: Macabeo, Xarel.lo,
Parellada, Chardonnays, Pinot Noir, etc.
Nos ocuparemos de las tres primeras que son las más tradicionales y con las que se elaboran
la mayoría de cavas, siendo las otras de origen francés.
La mezcla de las tres uvas en sus proporciones adecuadas determinadas por el enólogo, da
el vino base preparado para la segunda fermentación. Esta se realiza ya dentro de la propia
botella, la misma botella que llegará a nuestras manos para su consumo.
Al vino base se le añaden las levaduras y azúcar, siempre a gusto del enólogo. El enólogo es
el especialista y suele guardar celosamente sus fórmulas por las que consigue uno u otro
gusto o "bouqué".
Con las levaduras y el azúcar se provoca la segunda fermentación, proceso endógeno o
natural, por el cual las levaduras y el azúcar al fermentar producen el gas carbónico natural.
Las botellas son tapadas mediante tapones herméticos, llamados "tapón corona" y suelen ser
de acero inoxidable.
Las botellas son bajadas a la cava y almacenadas en rimas o en pupitres, allí en el silencio y
en la oscuridad, con la temperatura adecuada se realizará el milagro.
La temperatura está entre los 10/15 grados, es importante la oscuridad durante el proceso.
Deberá permanecer como mínimo nueve meses en la cava para poder ser catalogado como
tal, cuanto más envejece dentro la cava, más calidad se obtiene, eso sí, una vez sacado el
tapón hermético y preparada para el consumo es recomendable no guardarla más de un año.
Unas semanas antes de sacar el tapón hermético y de prepararlas para su consumo, las
botellas son colocadas cabeza abajo en pupitres (las que hayan estado en las rimas). Los
pupitres ya están preparados para que a las botellas se les pueda dar una inclinación gradual
a la vez que 1/8 de vuelta, de esta forma se consigue que las impurezas o madre del vino
(positos o sedimentos), fruto de la fermentación, vayan depositándose en el cuello de la
botella. Pasado este periodo de tiempo la botella ya estará lista para el llamado "degüello"
consistente en sustituir el tapón hermético (corona) por el tapón de corcho.
El "degüello" antiguamente se hacía a mano y se requería una gran especialización y
habilidad. Al sacar el tapón hermético impelido por las atmósferas de presión que está
soportando la botella, salía una pequeña cantidad de liquido, en él iban los sedimentos, en
fracciones inmediatas se le ponía el tapón de corcho por medio de unas máquinas
rudimentarias llamadas de martillo o de "picar".
Hoy en día este proceso se hace en unas piscinas de congelación, se sumergen los cuellos de
las botellas, éstos quedan congelados, acto seguido son sacados mediante unas máquinas,
por succión y por la ayuda de la propia presión de la botella, se saca el tapón corona, junto
con el "tapón" de hielo en donde van oclusionadas las impurezas.
Acto seguido viene la parte más "secreta" de cada enólogo, la aplicación de su formula
celosamente guardada. se le añade el jarabe ("xarop"), una pequeñísima proporción de licor
que será el elemento diferenciador, que dará la personalidad a cada producto, también se le
añade azúcar (el azúcar puesto antes de la segunda fermentación se lo han "comido" las
levaduras y ha producido el gas carbónico), en virtud de añadir, en este momento, una
cantidad mayor o menor de azúcar se consiguen las variedades de: Nature, Brut, Seco,
Semi-Seco, Dulce.
A continuación, a través de un proceso automático es colocado el tapón para el consumo
("corcho"), sujeto por un alambre (morrión) que impedirá, dada la presión que registra la
botella, descorches accidentales.
Se pasa por un riguroso control de calidad, trabajo que no pueden hacer las máquinas.
Por medio de la inspección ocular se observa cada botella a través del trasluz para
comprobar que no hayan quedado impurezas y que no estén turbias, deben ser
completamente nítidas.
Acto seguido se le coloca el envoltorio de papel de plomo (cápsula) que protegerá el tapón y
el alambre y se acaba prácticamente la botella poniéndole la etiqueta.

golpes del transporte.
La identificación viene por el propio corcho, a parte de lo que pueda venir expresado en la

The yeast and the sugar initiate the second fermentation, an endogenous or natural process by which yeast and sugar ferment, producing natural carbonic gas. The bottles are sealed using hermetic corks, called "crown corks", and should be made of stainless steel.
The bottles are lowered to the cellars, which are also called cavas, and stored in horizontal rows or riddling racks; in the silence and the darkness, with the appropriate temperature, the cava is miraculously made.
The temperature is between 10/15 degrees Celsius and darkness is important during the process.
It should remain in the cellar for a minimum on nine months in order to be cataloged; the longer it remains in the cellar, the higher quality it attains, and once the hermetic cork is removed and the cava is ready for consumption, it is recommended to not store the cava for more than one year.
A few weeks before removing the hermetic cork and preparing the cavas for consumption, the bottles are placed upside down in riddling racks (which are in horizontal rows). The riddling racks are made so the bottles will be inclined gradually, turning 1/8 of full turn at a time, in order for the impurities or the wine stem (deposit or sediment), the fruit of the fermentation process, to be deposited in the neck of the bottle. After this period of time the bottle is now ready for the so-called "secondary fermentation" which consists of replacing the hermetic cork (crown cork) for the cork.
The "secondary fermentation" used to be done by hand and required highly specialized skills and abilities. When removing the hermetic cork that is under atmospheric pressure from supporting the bottle, a small amount of liquid will come out that contains the sediments; in small fractions, the cork will be placed on the bottle by a rudimentary machine called a hammer or a "bite."
Today, the process is accomplished by freezing pools; they immerse the necks of the bottles in the pools, which leave them frozen, and then remove them immediately using machines. The suction and cylinder pressure of the machines help remove the crown cork together with the frozen cork which contains the impurities.
Then comes the most "secret" part of the process for each wine maker- using his jealously guarded
formula. Syrup ("xarop"), a very small proportion of liquor that will be the differentiating factor that gives personality to each product, is added along with sugar (the sugar added before the second fermentations has "eaten" the yeast and has produced carbonic gas). Adding more or less sugar at this time produces different varieties: Nature, Brut, Dry, Semi-Dry, Sweet.
Then, through an automatic process, the cork is placed on the bottle for consumption and is fastened by a wire (muselet) which prevents the cork from coming out accidentally through the pressure it puts on the bottle.
It undergoes strict quality control, which is a job that machines cannot do.
In a visual inspection, each bottle is observed by candling to check for any remaining impurities and to be sure the color isn't murky, but completely clear instead.
Then, the lead paper wrapper (capsule) is placed on the bottle to protect the cork and the wire. The process is complete when the bottle is labeled.
The bottles are guarded in cardboard packaging which protects them from any damage during transportation.
The cava is identified by its cork, apart from what is stated on the label.

The Process
Summary:
The actual production of cava comes from the this base wine, by carrying out a second fermentation of the must. Several varieties of grapes are used in the production of cava: Macabeo, Xarel.lo, Parellada, Chardonnays, Pinot Noir, etc. We will address the first three which are the most traditional and from which most cavas are produced, since the others are of French origin.
Steps:

Dear Sir/Madam,
Please find enclosed our brochure detailing the summer courses we are offering in 1995. I would draw your attention in particular to the English for Business Course which has features not usually available in small languages schools, namely access to experts in many specialist areas of business, and longstanding links with the local business community.
Our aim is quite simple: to make full use of our excellent classroom facilities and teaching staff in order to provide the best English language courses possible. Because we are part of a large organization we are able to offer our courses at very competitive prices.
We know that language courses are not just about classroom study, and an integral part of these courses is a weekly trip to one of the many surrounding places of interest, or in the case of the English for Business Course, trips to local businesses and factories. We also believe that adult students should have time to do as they please, and to this end weekends are left free. However, we are also very flexible – if students want something organized, whether it is a trip to London or a visit to a pub in the country, we will do our best to arrange it.
Although the standard length of courses is 2 weeks (English for Business and English for Teachers/Trainers) and 4 weeks (Academic and Communication Skills) we can accept students wishing to come for one or two weeks respectively. In the past we have also run courses outside the summer months to suit the exact needs of client groups. Adjunto hay un folleto sobre los cursos de verano que vamos a ofrecer en 1995. Me gustaría dirigir su atención en particular al Curso de Ingles para Negocios que tiene características que no son generalmente disponibles en las escuelas pequeñas de idiomas, como el acceso a expertos en áreas especializadas de negocios y conexiones de larga data con la comunidad local de negocios.
Nuestro propósito es muy simple: utilizar plenamente nuestras instalaciones excelentes y los profesores para ofrecer los mejores cursos de inglés posibles. Porque somos parte de una organización grande, podemos ofrecer nuestros cursos a precios muy competitivos.
