Doch obwohl (oder gerade weil?) Kokosnusswasser überall zu bekommen ist, bahnt sich der nächste „Superdrink“ bereits an: Birkenwasser. Und wie so oft bei Ernährungs-Trends, man denke nur an den Siegeszug des Grünkohls, ist auch dieses Wässerchen nicht neu, sondern nur neu aufgelegt. Schon die Wikinger sollen den Baumsaft getrunken haben. Bis heute ist der Konsum in Skandinavien und im östlichen Europa weit verbreitet.
Im Gegensatz zur Kokospalme, die mehrmals im Jahr Früchte trägt, kann das Birkenwasser nur zu einem bestimmten Zeitpunkt gewonnen werden. Zu Beginn des Frühlings, noch bevor die Bäume mit der weißen Rinde blühen, ziehen sie literweise Wasser aus dem Boden, verfeinern es mit Nährstoffen und pumpen es in ihre Kronen.
Um an den Saft zu gelangen, werden die Stämme angebohrt. „Eine Birke produziert etwa 500 Liter Flüssigkeit, abgezapft wird nur rund ein Prozent. Solange das Bohrloch wieder geschlossen wird, schadet man dem Baum also nicht“, sagt Clara Vaisse, Mitbegründerin des britischen Start-ups „Sibberi“, das Birkenwasser seit 2015, hip verpackt, in Supermärkte und Onlineshops bringt. Während im Gründungsjahr nur etwa 500 Bäume dem Unternehmen ihren Saft gaben, ist für diesen Frühling wegen der hohen Nachfrage das Anbohren von mehr als 4000 Bäumen geplant. Dafür arbeitet „Sibberi“ mit Bauern in den baltischen Staaten und in Finnland zusammen.

Even though (or just because?) coconut water is available everywhere, birch sap is already emerging as the next “superdrink”. As it usually is with food trends, one only sees the current success of the product but does not realise that the drink is not actually a new product but rather packaged and launched differently. Birch sap has supposedly already been drunk by the Vikings. The consumption trends in Scandinavia and eastern Europe have had widespread influences even in today’s context.
In contrast to the coconut palm which bears fruit several times a year, birch sap can only be harvested during a specific period. At the start of spring before the birch flowers bloom, the white-striped trees draw in litres of water from the ground and absorb nutrients before pumping them into their crowns as nourishment.
A hole needs to be drilled in the stem in order to extract the sap. “A birch tree produces around 500 litres of liquid but only around 1 percent of it will be harvested.” As long as the hole is sealed up the tree will not be damaged,” says Clara Vaisse, co-founder of the British start up named “Sibberi”, which has been supplying birch sap as a fashionably packaged product to supermarkets and online shops since 2015. While the company had already harvested birch sap from 500 trees in its starting year, more than 4000 trees will be planted this summer due to the high demand for it. As such “Sibberi” is working together with farmers in the Baltic states and Finland.
