-Terpineol gibt in zu hoher Konzentration eine holzig-terpenig, erdige Off-Note. Es tritt im Orangensaftgetränk als typische Alterungsnote auf und entsteht durch säurekatalysierte Hydratisierung oder mikrobiologische Transformation von Limonen.
Da der Anteil des Limonens in den Orangen … Ölen massiv reduziert wurde, tritt im Getränk diese beschriebene Fehlnote auch nach langen Lagerzeiten weniger bzw. gar nicht auf.
Dafür wurden die Carbonyle wesentlich aufkonzentriert, wie dieses Beispiel einer GC/MS Messung (Säule:DB-1, 60m) des Einfachöls … zeigt:

Citronenschalenöl
Das Citronenöl wird größtenteils aus den USA und Italien bezogen.
Der Carbonylgehalt ist im Vergleich zu den anderen Citrusölen höher. Er wird beim Citronenöl durch die Schlüsselkomponente Citral bestimmt, die den fruchtig, frisch-citronigen Charakter des Öls ausmacht. Neben dem hohen Anteil ( )-Limonen ist die Anwesenheit von -Pinen (ca. 14 %) und -Terpinen (ca. 13 %) typisch. Zusammen mit Terpinen-4-ol sind sie für den schaligen Geschmack verantwortlich.
Bei den Estern tragen vor allem Geranyl- und Nerylacetat zur fruchtig-blumigen Note des Öls bei.
Translation - English ( )--Terpineol, (-)-terpinen-4-ol and ( )-linalool are the most important alcohols in orange peel oil. If present in overly high concentrations, -terpineol can yield the woody/earthy, terpenic off note. Detectable in orange juice beverages as a characteristic aged note, -terpineol is the result of either acid-catalyzed hydration or microbiological conversion of limonene.
Because the concentration of limonene has been greatly reduced in orange oils, long storage periods are less likely to produce the above off note—it might not even appear at all.
The concentration of carbonyls, on the other hand, is significantly higher, as demonstrated by the following sample GC/MS data (column: DB-1, 60 m) of the unprocessed oil:

Lemon Peel Oil
Most lemon oil is imported from the United States and Italy.
The carbonyl concentration of lemon oil is relatively higher in comparison to that of other citrus oils. The key component of lemon oil is citral, which lends the oil its fruity, lemony-fresh character. In addition to the high concentration of ( )-limonene, this oil also typically contains -pinene (approx. 14 %) and -terpinene (approx. 13 %). These compounds plus terpinene-4-ol are responsible for the typical rind taste.
Geranyl acetate and neryl acetate are the esters largely responsible for the oil's fruity, flowery note.
