Something else I thought was odd and would like your thoughts on...he said they expect translators to translate ~5-7,000 words a day. I know for one job that'd be outrageous, but would that be normal for a full-time position?

It depends if they're counting fuzzies or not of course...
As an in-house translator I was expected to translate minimum 2000 words a day plus deal with odds and ends like checking the sales manager's e-mails for typos, dealing with tests from freelancers, updating the English version of the website etc.
