Bollito misto is a famous Italian stew which I think this menu item might be alluding to.

I am assuming this is a main course rather than a bun of any kind. Again, I have put a low confidence level as it's hard to be sure.

agree  Charles Davis: Since it's Valencian, it must be bollit, a Valencian form of Catalan bullit, meaning boiled (= hervido in Castilian). But in practice it means a stew anyway.

And also according to the images I have seen, I think this is the chef's invention, without any previous example to be based on.
I also saw like filo pastry sachets where the oyster may be placed. But since it says "bollito" this takes me to a oven-baked sort of dough.
