Some - such as Edinburgh or Stirling - rank amongst Europe's most impressive structures while other less grand examples provide a stark insight into darker times.

Edinburgh Castle, Edinburgh
Perched high above the capital, this is Scotland's most important and famous castle. There has been a castle here since the 11th century and each century has seen changes and additions resulting in today's mix of military barracks, palace, fortress and war memorial. The castle is also home to the Scottish Crown Jewels - 'The Honours of Scotland' - and the famous Stone of Destiny, plus the mighty 'Mons Meg', a huge 15th-century siege cannon.

Source text - French Le vignoble de l’AOC cognac est réparti en 6 crus, déterminés par les propriétés et spécificités de la terre qui leur est attribuée, caractérisant différentes qualités d’eaux-de-vie.
Ainsi, chaque distillation est estampillée de son cru, à savoir la Grande Champagne, la Petite Champagne, la Borderie, les Fins Bois, les Bons Bois et les Bois Ordinaires.
Le vignoble cognaçais est issu de cépages blancs, avec pour principal cépage l’ugni-blanc, choisi en raison de sa faible teneur alcoolique et de son fort taux d’acidité afin de correspondre aux critères de la distillation charentaise.
Il est alors chauffé dans les chaudières, jusqu’à l’extraction des premières vapeurs. Elles ne sont composées que d’alcool et s’élèvent ensuite jusque dans le chapeau puis dans le col de cygne, avant de se condenser dans le serpentin du refroidisseur.
L’étape de la première distillation est alors achevée, et le remier distillat nommé «brouillis » se prépare à de nouveau être distillé. La seconde distillation, aussi appelée “Bonne chauffe”, est réalisée selon les mêmes procédés, jusqu’à l’obtention du second distillat dont seul le cœur sera prélevé et appelé « Eau-de-vie ».
