Caldo Verde

200g de couve galega cortada em caldo-verde;
500g de batata
50g de chouriço
1 cebola; 2 dentes de alho
1,5L de água
1 decilitro de azeite
sal.

Coza as batatas descascadas com a cebola, o chouriço e os dentes de alho em litro e meio de água temperada com o sal e metade do azeite. Retire o chouriço, esmague tudo o resto e leve novamente ao lume. Assim que estiver a ferver adicione a couve. Deixe cozer com o recipiente destapado só o tempo suficiente para a couve deixar de saber a crú. Verifique o tempero e adicione o resto do azeite. Corte o chouriço em rodelas, distribua-as pelos pratos e regue com o caldo-verde.

Nota: Se a couve for muito dura, escalde-a com água a ferver e passe-a em seguida por água fria.

Green Soup

7 Ounces of Finely Shredded Kale
2 Cups of Potato
2 Ounces of Portuguese Chouriço
1 Onion
2 Cloves of Garlic
6 Cups of Water
6 Tablespoons of Olive Oil
Salt

Peel potatoes and boil with the onion, chouriço, garlic and half the olive oil in the water seasoned with salt. Once the potaotes are cooked, remove the chouriço and set aside. Mash the remaining ingredients in the pot and return to a boil. Add the shredded Kale and simmer just until the tender, but not soft. Check the seasoning and add remaining olive oil. Slice the chouriço into rounds and distribute evenly among soup bowls. Ladle the soup into the soup bowls and serve.
