Cherkasov san's approach seem perfect but, here, the point is in the context: "nitrate compounds containing nitrogen intaken (or absorbed) from food". The emphasis is on the origin of the nitrogen, otherwise, as Joss has correctly remarked, a "nitrate containing nitrogen" would be a bit redundant

Don't know the context, but I reckon you may change "from" to "extracted from".

Of course, a nitrate compound contains a nitrogen. I think that the text means to clarify the origin of the nitrogen contained in the nitrate compound to define the scope of the nitrate compound of interest.

agree Satomi Klein : I agree. Definition of type of nitrogen. This nitrate compound includes nitrogen of which some types of foods contain naturally. But I’m not sure if this nitrogen is extracted from food since the context is not known. Can be artificially made.

Nitrate compounds are commonly found in food, and therefore the phrase may just mean 食べものから摂る硝酸塩化合物.
The part 窒素を含む might be oriented to general readers who may not know that nitrate compounds always contain nitrate.

The asker's translaton seems appropriate for this particular case.
