Cherkasov san's approach seem perfect but, here, the point is in the context: "nitrate compounds containing nitrogen intaken (or absorbed) from food". The emphasis is on the origin of the nitrogen, otherwise, as Joss has correctly remarked, a "nitrate containing nitrogen" would be a bit redundant

Don't know the context, but I reckon you may change "from" to "extracted from".

: I agree. Definition of type of nitrogen. This nitrate compound includes nitrogen of which some types of foods contain naturally. But I’m not sure if this nitrogen is extracted from food since the context is not known. Can be artificially made.
