"Черные создают пешечный кулак в центре"

This means a sort of menacing pawn cluster in the centre, such as on c4 and d4 or e4 and f4 for White. I play chess quite a bit myself but I've never come across a precise equivalent in English.

I think your descriptive translation is pretty good. Other similar ways to put it might include "pawn foothold/stronghold in the center," "powerful pawn mass in the center," "pawn storm in the center," "pawn superiority/majority in the center," "pawn phalanx" and simply "a strong pawn push in the center."
