: itinerary = a detailed plan or route of a journey; while 'rozkład zajęć' = 8 a.m breakfast; 10 a.m. playing games; 1 a.m. lunch; 2 p.m. sunbathing, etc.

A journey's itinerary includes not only a route but also a plan of activities along the way.

: It may ALSO include a plan of activities, but it is mainly a route plan. Whereas 'rozkład zajęć' would not even mention the route plan. 'Itinerary' would therefore be misleading since a cruise ship would certainly also have an itinerary

I certainly don't want to suggest something misleading.I made the suggestion because I've encountered it when helping various friends who are often engaged by passenger cruise shipping companies as professional shipboard musicians.

itinerary surely is only about where you're going, isn't it? (cf: itinerant musician) schedule is alright but perhaps just a little too official, timetable also okay, maybe it has a schooly flavour. So I think there are 3 possibiities depending on your taste.
